Fried Fish and Spanish Rice

INGREDIENTS:

• 2 filets of white fish of choice (talapia, haddock, etc.)
• 1 egg
• 1/2 cup flour
• 1 tbsp. dill weed (dried spice)
• salt and pepper to taste. 
• 3 tbsp. cooking oil (avocado or canola)

DIRECTIONS:

1. Place the egg in a bowl and scrambled until combined.
2. Place the flour in a separate bowl.
3. Dip the fish filets in the egg mixture and then cover them with flour on all sides (this is what will give the fish a "breaded" taste)
4. Heat the oil in a large frying pan on medium-high heat.. Once hot, place the fish filets in the pan (be careful) and sprinkle the top with spices (dill, salt and pepper).
5. Cook on both sides until golden brown and serve with Spanish Rice and a vegetable of your choice (I recommend broccoli, green beans or Stir Fried Vegetables). 

​MAKES 2 SERVINGS.

• The length of time depends on how thick your fish filet is, but generally speaking, 2-3 minutes on each side is usually sufficient.
